Nina requested one of our favorite snack recipes this past weekend. So easy and so-o good…how could i have forgotten about it? If you have plans to cozy up and watch a movie in front of roaring fireplace (ok in this day and age, most of us just turn the switch on, but doesn’t a roaring fireplace sound so much better???) Peanut Butter Popcorn is the perfect munchie!
Peanut Butter Popcorn
12 cups freshly popped popcorn
1 cup sugar
1 cup light corn syrup
1 cup peanut butter
1 tsp vanilla
Prep
As you pop the fresh popcorn, place in oven at lowest setting to keep warm.
In a medium sauceapan, combine sugar and light corn syrup. Cook over medium heat, storing until mixture comes to a rolling boil. Remove from heat and immediately stir in peanut butter and vanilla.
In a large bowl, pour mixture over popcorn and stir to coat. Spoon into a greased dish and let cool. Break it into chunks or let your guests do that work!
**NOTE: my mistake is to your benefit…remember to take out any unpopped kernels before adding the peanut butter mixture. That is, if you care to keep your teeth intact:)
