Homemade Granola

Those of you who know me, know i love my breaky of granola, yoghurt and fresh berries. In fact, what did i miss the most over the past 3 months that it took to lose my summer “layer” (eeks!)? My favourite start to the day..well, and my morning coffee! The crunch, the tartness, the freshness..it’s all good and to me, constitutes perfection!

Still wanting to keep on the healthful eating train, i went on the hunt for a low carb granola..and to my delight, found a winner. Honest to goodness, i do believe this is the tastiest granola to ever grace my cereal bowl! Love it so much, i whipped up a double batch as soon as the first one was gone!

This is also a dandy dish to serve to breakfast company during the Holidays..or take it on the road with you. Heading on a winter ski vacation? Bring a batch and fill those hungry bellies before an activity filled day!

 

LOW CARB GRANOLA from Chez Larsson‘s fabulous site

  • 3dl (1 1/4 cup) Chopped brazil nuts
  • 1 dl (1/2 cup) Pumpkin seeds
  • 3 tbsp. Sesame seeds
  • 3 tbsp. Coconut flakes
  • 1/2 dl (1/4 cup) Coconut fat
  • 3 dl (1 1/4 cup) Almond flour
  • 1 tbsp. Cinnamon
  • 1 pinch of salt
  • 3 tbsp. Honey or a sprinkle of Stevia

 

Roast the brazil nuts, the pumpkin and sesame seeds and coconut flakes in a hot pan for a few minutes. Make sure you stir all the time so it doesn’t burn. Transfer to a plate.

Wipe the pan with a paper towel. Heat up the coconut fat and add the nut mixture together with the almond flour. Add the cinnamon and salt. Stir.
Add the honey or the Stevia (I use honey) and fry at medium heat for a few minutes.


Transfer to a plate to cool. Keep the granola in an air tight jar.
