Can we pretend for a second that it’s summer? Jeesh… I know we needed rain, but… it IS July….right?? The second the sun peaks out, it’s so gloriously warm. We just need a bit more of it. I’m willing it to happen.
Last weekend I was craving watermelon. There’s something about it…so deliciously sweet and juicy. It is quintessentialy summer. So are slushies, am I right? The only thing, is I don’t like slushies. Am I weird? I just feel like I’m drinking sugary syrup. Haters gonna hate out there, I just know it. But just trying to keep things real, ok?
Anywho, the kids, on the other hand, do love slushies. So why not meet in the middle and make a watermelon one? I looked up some recipes and then decided to just kinda wing it. The results were slurped up…a good enough indication that we repeated the recipe again the next day again. This recipe is so-o easy…like have the drink ready in minutes easy. And don’t feel like you have to be measuring for the recipe. It’s an eyeballer! The only thing I like to keep from overdoing is the sugar. Honestly, watermelon is sweet enough…I even tend to go lighter on it than I have written. It really is personal preference. Hope you enjoy! I’m posting this recipe in complete faith that the sunny weather is on it’s way…
- juice from 2 limes
- 2 tbsp organic sugar
- mint leaves, handful
- watermelon, one half cut into cubes
- ice
- light rum
- In a separate pitcher, muddle together the lime juice, sugar and a handful of mint leaves.
- Blend watermelon cubes.
- Add blended watermelon to the pitcher.
- Fill glasses with ice and add one shot of light rum to each.
- Pour watermelon overtop.
- Garnish with a lime wedge to the rim of the glass and some additional fresh mint if you wish.
