Pumpkin Spice Oatmeal

Ingredients
  • 1 cup large flake oats
  • 1¾ cup almond milk
  • pinch of salt
  • ¼ cup pure pumpkin puree
  • ½ teaspoon vanilla extract
  • 1 teaspoon pumpkin spice mix
  • Topppings: toasted pecans, maple syrup, craisins, pumpkin seeds, toasted coconut, additional almond milk
Instructions
  1. Combine oats, almond milk and salt in a saucepan over medium heat.
  2. Bring to a low boil. Reduce heat and simmer, stirring occasionally, about 3-5 minutes.
  3. Add pumpkin, vanilla, and pumpkin spice mix and stir until heated through, about 1 minute.
  4. Top with desired toppings and enjoy.
