The Best Gluten Free Chocolate Chip Cookies

Ingredients
  • 1 cup butter, room temperature **
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 egg yolks and 1 egg
  • 1 tsp vanilla
  • 1 tsp salt
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • 2 cups gluten free flour ( I use the Namaste Perfect Flour Blend)
  • 1½ - 2 cups chocolate chips

Instructions
  1. Heat oven to 350 degrees.
  2. Cream together the butter and the sugars until blended
  3. Add egg and vanilla and beat well
  4. Add salt, baking soda, cinnamon and flour. Mix until just combined.
  5. Stir in the chocolate chips
  6. If not baking right away, cover with plastic wrap and refrigerate until ready to use.
  7. If baking, scoop onto parchment lined cookie sheet.
  8. Bake for 8-12 minutes, depending on the heat of your oven.
Prep
**up the ante by browning the butter and letting it cool to room temp.
These cookies will brown quicker than cookies with regular flour. It is best to underbake them slightly and let them set on the cookie sheet for a few minutes before moving them to a cooling rack.
