Caramelized Banana Bread
  • 4 ripe bananas
  • 2 Tablespoons coconut oil
  • 2 cups coconut milk
  • 2 Tablespoons lemon juice
  • ½ cup runny honey
  • 2 Tablespoons chia seeds
  • 1¾ cups rolled oats
  • 3⅓ cups spelt flour
  • ¾ cup medium dessicated coconut
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • pumpkins seeds
  • ribbon or shredded coconut
  1. Preheat oven to 375 degrees F and grease two loaf pans.
  2. Peel bananas and slice.
  3. Heat coconut oil in frying pan and add bananas. Fry until they are caramelized.
  4. Remove bananas from pan into a bowl.
  5. Add coconut milk, lemon juice, honey and chia seeds.
  6. Whisk together well.
  7. In another mixing bowl, combine flour, coconut, baking powder and salt.
  8. Add the banana mixture to the dry ingredients and mix well with a wooden spoon. The batter will be thick.
  9. Divide batter between the two loaf pans and spread out.
  10. Top loaves with pumpkin seeds and coconut and press lightly into the batter.
  11. Bake in oven for 40-50 minutes.
  12. Cool before cutting.
