Caramelized Banana Bread

- 4 ripe bananas
- 2 Tablespoons coconut oil
- 2 cups coconut milk
- 2 Tablespoons lemon juice
- ½ cup runny honey
- 2 Tablespoons chia seeds
- 1¾ cups rolled oats
- 3⅓ cups spelt flour
- ¾ cup medium dessicated coconut
- 4 teaspoons baking powder
- 2 teaspoons salt
- pumpkins seeds
- ribbon or shredded coconut
- Preheat oven to 375 degrees F and grease two loaf pans.
- Peel bananas and slice.
- Heat coconut oil in frying pan and add bananas. Fry until they are caramelized.
- Remove bananas from pan into a bowl.
- Add coconut milk, lemon juice, honey and chia seeds.
- Whisk together well.
- In another mixing bowl, combine flour, coconut, baking powder and salt.
- Add the banana mixture to the dry ingredients and mix well with a wooden spoon. The batter will be thick.
- Divide batter between the two loaf pans and spread out.
- Top loaves with pumpkin seeds and coconut and press lightly into the batter.
- Bake in oven for 40-50 minutes.
- Cool before cutting.
