Coconut Rice
Serves: Serves 4
  • 1 cup uncooked jasmine rice, rinsed
  • 1¼ cup canned coconut milk
  • ¾ cup coconut water
  • ½ teaspoon Kosher salt
  • 3 Tablespoons unsweetened, flaked coconut
  • 1 Tablespoon coconut oil
  1. Rinse the jasmine rice.
  2. In a medium pot, combine coconut milk and coconut water and bring to a low boil.
  3. Add rice, salt, unsweetened coconut, and coconut oil and stir.
  4. Place lid on pot and turn heat to lowest setting.
  5. Allow rice to cook for 10 minutes.
  6. Turn heat off completely and let rice sit on stove another 20 minutes. Keep covered and do not peek!
  7. Remove lid and fluff rice with a fork.
