Bacon Cheddar Quinoa Bites

Ingredients
  • ¾ cup uncooked quinoa, rinsed
  • 1½ cups chicken or vegetable broth
  • 2 eggs, lightly beaten
  • 1 cup broccoli florets, finely diced
  • 1 red pepper, finely diced
  • 1 cup red onion, finely diced
  • 1 garlic cloved, minced
  • 1½ cups cheddar cheese, grated
  • ½ cup bacon, diced and cooked
  • ½ teaspoon paprika
  • salt
  • pepper
Instructions
  1. In a medium saucepan, combine quinoa and broth and cook according to package instructions. Let cool. This can be done in advance.
  2. Preheat oven to 350 degrees.
  3. In a large bowl, combine all ingredients.
  4. Spray mini muffin tins with olive oil spray or coconut oil spray.
  5. Put a heaping tablespoon of quinoa mixture into each muffin cup and pack down.
  6. Bake for 15 minutes or until edges turn golden brown.
  7. Remove from oven and let cool for 5 minutes and carefully remove from tins and cool.
